Mixer Challah

Ingredients
  • 2 oz fresh yeast
  • 1¾ cup warm water
  • ½ cup sugar
  • 3 egg yolks
  • 5 + 2 cups flour
  • ¼ cup oil
  • 1 Tbsp salt

Glaze
  • 1 egg beaten
  • Poppy seeds (optional)
Preheat oven to 350°. YIELDS: 3 loaves.

Mix yeast, warm water and sugar. Let stand until yeast bubbles. Add egg yolks, 5 cups of flour, oil and salt. Mix with dough hook on low until ingredients are combined. Slowly mix in remaining 2 cups of flour. Then mix on low or knead for 10 minutes. Oil the top of the dough, cover and let rise for 1 hour.

Divide dough into thirds. Shape and place in greased pans, cover and let rise another 45 minutes.

If you want a braided loaf, divide each third into thirds, roll the pieces into ropes, and braid the ropes. Carefully put the result into your pan or raise it and bake it on a baking stone.

Brush loaves with beaten egg and sprinkle with poppy seeds if desired. Bake until brown, 45 minutes to 1 hour. Remove from pans and cool on racks.
